That's up to you, the player. Why is everything blue? Impostopia has a blue sun. The planet from part 2 has a red sun. When someone lives on one of those planets for long enough, their eyes get used to it and the colors look like they do on earth. Earth actually has a yellow sun, so if we went to a planet with a white sun, everything would look purple because that's the opposite of yellow. The reason the impostors aren't all blue is really just a style choice.
