Sorry about the late release, these simulators can take awhile to make. Mac OS X El capitan (OSX 10.11) Is the latest version of Mac OS X as of now, it is the successor of Mac OS X Yosemite 10.10. Mac OS X Sierra will be released in a few months by apple and as of now it will either be Mac OS X Sierra 10.12 or Mac OS Sierra 11.0.
